Cozy Up with Texas Comfort Food This Month 🤠
When the temperatures dip and the days get shorter, nothing beats gathering in the kitchen and letting something hearty simmer away on the stove. And here in Texas, comfort food always comes with a little extra personality — bold spices, slow-cooked goodness, and meals that feel like a warm hug at the end of the day.
This is the kind of food that fills your home with good smells, brings folks wandering into the kitchen asking, “What’s cookin’?” and reminds you that simple, homemade meals are still the very best kind.

🌶️ The Classic: Texas Chili

Now listen… this isn’t just beans chili. Real Texas chili is all about tender beef, rich tomatoes, smoky spices, and letting everything simmer low and slow until it’s downright irresistible.
Top it with shredded cheese, a dollop of sour cream if you like, and a squeeze of lime for that little extra something.
Ingredients:

1½ lbs. diced beef chuck

1 can pinto beans
-
1 can black beans
-
Diced onions
-
Diced red & green peppers
-
2 tbsp chili powder
-
1 tsp cumin
-
½ tsp garlic salt
-
½ tsp smoked paprika
-
1 can crushed tomatoes
-
1 cup beef broth
-
Salt to taste
Directions:
Brown your beef first, then add everything to a large pot. Simmer gently for about 1½ hours on the stovetop…
OR (my favorite way) dump it all in the crockpot and let it cook low and slow all day long. Dinner will be waiting on you. 🙌
🥘 Cast Iron Cornbread (A Must!)

No Texas comfort meal is complete without cornbread — especially baked up golden in a cast iron skillet.
For a little Texas twist, stir in:

Chopped jalapeños
-
Shredded cheddar cheese
Ingredients:
1 tsp vegetable shortening or oil
2 large eggs
1 C. Buttermilk (makes the cornbread moister and fluffy) or regular milk
1/4 C. Vegetable oil
1 1/2 C. Martha White Self Rising Corn Meal (I like yellow)
1 C. All Purpose flour
1/4 C. Splenda granulated Sugar (I use a heaping 1/4 C.- we like our cornbread a tad sweet)
Directions:
- Heat oven to 450 F. Place cast iron pan with shortening into the oven while it preheats to get pipin hot.
- Whisk eggs, milk, oil together. Pour into Cornmeal, Flour and sugar.
- Mix until combined.
- Remove skillet from oven. Pour batter into skillet – you should here the sizzle! That’s the magic.
- Bake 20 – 25 minutes until golden brown.
- Remove from oven, slater with butter. Serve warm with more butter.
Makes a great dessert after dinner too, add a drizzle of local honey on top! Don’t skip it.
🍲 Brisket Soup (aka Barbecue Stew)
Got leftover brisket? This is one of my favorite ways to stretch it into another cozy meal.
Shredded brisket turns into pure comfort when simmered with vegetables, beans, and a smoky broth that tastes like Texas in a bowl.
Brisket Soup Ingredients:

Leftover shredded brisket

Diced onions
-
Carrots
-
Potatoes
-
1 can pinto beans
-
Beef broth
-
A good dollop of your smokiest barbecue sauce
👉 Mama Kat Tip:
This is the perfect place to use up all those leftover veggies you’ve stashed in the freezer. Toss them in — nothing fancy required.
Directions:
Dump everything together and simmer until the vegetables are tender…or let it cozy up in your slow cooker on low all afternoon.
Serve it with that cast iron cornbread and call it a winter win.
🥧 Sweet Finishes: Dutch Apple Pie

Every good comfort meal deserves a sweet ending — and this one couldn’t be easier.
I made a Dutch Apple Pie tonight, and y’all… simple never tasted so good.
You’ll need:

1 pie crust (I used Pillsbury — no shame here)

1 can NO SUGAR ADDED apple pie filling

Cinnamon (I’m loving Vietnamese cinnamon lately)
Crumb Topping:

½ cup flour
-
½ cup Splenda brown sugar
-
¼ cup butter, cut into pieces
-
¼ cup chopped pecans (because… Texas 🤠)
Quick Pie How-To:

Pre-bake your pie crust according to package directions so it’s not gooey.

Pour in the apple pie filling and sprinkle with cinnamon.

Mix crumb topping ingredients until crumbly, then sprinkle evenly over the pie.

Bake at 375°F for 40–45 minutes, until bubbly and golden. Keep an eye on it — we want browned, not burned!
Serve warm with a scoop of ice cream and call it a day.
