Now, I’ll be honest — I’m not standing in any drive-thru lines for a sugar-loaded latte. This version is the country way: simple, wholesome, and made with real pumpkin. no mystery ingredients, and absolutely no crash an hour later. Just a cozy, low-carb, high-protein (feel free to add your favorite protein powder to this yummy drink – I won’t tell) Pumpkin Latte that feels like fall in a mug.
You can make it right on the stovetop while your morning chores get started. I usually mix up a batch and take it out to the porch to sip while the sun peeks over the trees. Cozy Pumpkin Latte
Ingredients:
- 2 cups of milk (dairy or non-dairy)
- ¼ cup of concentrated coffee (or 2 shots of espresso)
- 2 tbsp pumpkin puree
- 1-2 Squirts of Pecan syrup – Sugar free
- 2 tbsp Splenda Granulated Sugar
- 1 tsp vanilla extract
- ½ tsp pumpkin pie spice
- Whipped cream, topping
Instructions:
- In a small/medium pot, add the milk, pumpkin puree and Splenda sugar. Mix and heat on the stove. Remove right BEFORE it starts boiling. (you’ll start to see the steam coming off the milk)
- Then add the vanilla extract and the pumpkin pie spice. Whisk until well combined.
- Pour the milk in a glass or mug and pour the coffee on top.
- Then top with whipped cream and sprinkle some more pumpkin pie spice on top.
- Enjoy while hot!
